“What was more fun?  Wakeboarding around Le Chiffre’s mega yacht, the divine poached eggs and bacon or seeing the genoa unfurl on the passage from Sopers Hole to Norman Island?

Getting the balance between looking after your guests and bothering them and letting them have a go at sailing and being in control is a fine art – which you do really well!

The boat is of course beautiful!

The excellent cooking solved the Caribbean food problem completely and left even the best restaurants (Biras Creek) in the shaded.

"As a final touch to our two week holiday to Antigua Lynn & Mark took us all (6) on a fantastic adventure on their beautiful boat. We started off from Falmouth Harbour and set sail towards Green Island for a wonderful and delicious lunch followed by a nice swim and chilled rose wine on deck.

Thursday morning we had our ‘Scandinavian’ morning swim and tea, breakfast of fruits and croissants, before yet again setting sail to Carlisle Bay where ‘hundreds’ of turtles welcomed us and we had a lovely lunch and more rose ! We‘ve had a wonderful time with you both. Thank you so much for giving us this amazing final touch to our holiday. Lots of love xxxx"

"At the Antigua Show we are treated to so many wonderful parties and meals that the details often fade into memory . So this year occasionally I asked about a yacht and a meal. Ed Hamilton told me he had an outstanding lunch on Pacific Wave.

Pacific Wave is a new addition to the Nicholson fleet. She is a 72 foot , Italian-designed sailing yacht built for speed. With two wide beds in the master and then two upper/lower cabins forward and the crew of 2 all the way forward she has the feel of a race boat. And yet the look is comfortable, classy and high grade. Her captain describes her as ‘long legged, solid and steady with 15 knots of wind. A beautiful drive.’
The kick is this: Lynn Griffiths is the captain and her chef is Mark Miles. They are a British couple of sailors who like speed, comfort and first class service.

Mark prepared and served up a grilled and chilled vegetable terrine as a starter (with a French Rose from Provence), followed by home made pasta with ginger shrimp (with Pouilly Fume white wine), and a chilled Mango and sweet white wine soup as dessert (with a Mumm Champagne). As I mentioned, Ed Hamilton was smacking his lips (if you could possibly imagine Ed every doing such a thing."
